Ingredients

  • Blue Band Low Fat Spread
  • 1 medium avocado Pilled, Pitted and Chopped
  • 1/2 cup grape tomatoes cut into 1/4 inch dice
  • 1/2 cup red onion cut into 1/8 inch dice
  • 1-2 cloves minced fresh garlic
  • 1/2 teaspoon sea salt
  • 1 egg
  • 2 slices of bread

Instructions

  1. To make the guacamole, mash the avocado with a squeeze of lemon juice and Blue Band low fat spread. Add tomato, onion, garlic and sea salt. Stir everything together with a fork.
  2. Cook egg to your liking in a greased non-stick skillet.
  3. While the egg is cooking, toast your bread with Blue Band low fat spread
  4. Top toasted bread with guacamole. Top with your egg and enjoy
