Ingredients

  • 1 tablespoon oil
  • 1 teaspoon garlic minced
  • quater cup mushroom thinly sliced
  • salt
  • freshly ground black pepper
  • quater cup spinach chopped
  • 2 eggs
  • 1 teaspoon Blue Band margarine spread

Instructions

  1. Heat oil in a pan and saute the garlic in it. Add the mushrooms, season with salt and pepper and cook for 2 minutes. Add the spinach, stir and set aside to cool completely.
  2. Once cooled, crack 2 eggs in a bowl and mix in the mushroom and spinach mixture, then fry
  3. Toast Bread with Blue Band Low Fat Spread
  4. Serve toast bread with the fried spinach omelette
toast and tea, for serving
