Instructions
In a large bowl, combine all dry ingredients except the grated carrots and brown sugar. Set aside.
Using a cheesecloth pat the grated carrots until its juices are absorbed.Set aside.
In another bowl combine all the wet ingredients together with the brown sugar and the grated carrots.
Add the dry ingredients to the wet ingredients and mix just until the mixture is moistened. Do not overmix(The mixture is meant to be lumpy)
Heat a frying pan with medium heat. Add 1/4 teaspoon Blue Band. Once melted pour batter by 1/4 cupfuls. Turn when bubbles form on top of the pancake; cook until the second side is golden brown.
