Ingredients
3 cups plain flour
quater teaspoon salt
teaspoon baking powder
3 tablespoon Blue Band margarine spread
2 tablespoon sugar
3 eggs
half cup milk
oil for deep-fat frying

Instructions
Sieve the plain flour and salt and then add baking powder. Set aside.
In a large bowl, use a wooden spoon to beat together margarine and sugar until creamy.
Mix into this one egg at a time followed by milk. Add the flour mixture into this and knead into a dough.
Let rest for 30 minutes.
Pull out a portion of the dough and roll out to a thickness of ½ inch.
Use a pizza cutter or knife to cut out small portions of the dough in small rectangles.
Fry the dough in hot oil for 6-8 minutes or until golden brown.
Serve the mandazi with some tea.
