Ingredients

  • 3 cups plain flour
  • quater teaspoon salt
  • teaspoon baking powder
  • 3 tablespoon Blue Band margarine spread
  • 2 tablespoon sugar
  • 3 eggs
  • half cup milk
  • oil for deep-fat frying

Instructions

  1. Sieve the plain flour and salt and then add baking powder. Set aside.
  2. In a large bowl, use a wooden spoon to beat together margarine and sugar until creamy.
  3. Mix into this one egg at a time followed by milk. Add the flour mixture into this and knead into a dough.
  4. Let rest for 30 minutes.
  5. Pull out a portion of the dough and roll out to a thickness of ½ inch.
  6. Use a pizza cutter or knife to cut out small portions of the dough in small rectangles.
  7. Fry the dough in hot oil for 6-8 minutes or until golden brown.
  8. Serve the mandazi with some tea.
