Peanut Butter Oatmeal Cookies

- 1 and half cups all-purpose flour
- 1 teaspoon baking powder
- half teaspoon baking soda
- 1 cup margarine spread
- 1 cup sugar
- half cup brown sugar
- 2 eggs
- 1 cup Blue Band peanut butter
- 2 teaspoon vanilla essence
- 2 cups oats
- In a bowl, mix together flour, baking powder and baking soda. Set aside.
- In another bowl, using an electric mixer or whisk, beat together margarine and sugar until creamed. Beat into it one egg at a time followed by peanut butter and vanilla.
- Add the dry ingredients and oats and mix using a spatula until the dough comes together.
- Chill the mixture for at least 20-25 minutes in the refrigerator.
- Scoop up some of the mixture and roll into a ball in your palms. Place them 1 inch apart on a greased baking tray and bake in a preheated oven at 175C for 12-14 minutes or until golden brown.
- Cool completely before serving.
