- 2 packs of dried rice noodles (approx. 260 g)
- 3 tablespoon oil
- 1 onion slices
- half cup red peppers thinly sliced
- half cup carrots thinly sliced
- half cup broccoli florets
- half cup cabbage shredded
- 1 tablespoon ginger chopped
- salt
- half teaspoon black pepper crushed
- 1 tablespoon Blue Band peanut butter
- 4 tablespoon water
- 3 tablespoon light soy sauce
- half cup spring onion chopped
- In boiling water, add the dry noodles and cook for 2 minutes. Drain the water and set aside.
- In a wok or wide pan, heat oil and add the onions. Cook until the onions become translucent.
- Add the bell peppers, carrots, broccoli, cabbage and ginger. Mix well.
