Ingredients

  • 2 large ripe bananas
  • 1/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • pinch salt
  • 1/2 cup sugar
  • 5 tablespoons Blue Band
  • 2 eggs
  • 1/2 cup buttermilk
  • vanilla essence
  • 1 3/4 tablespoon Blue Band peanut butter

Instructions

  1. Pre-heat the oven to 190C.Line 12 hole muffin tin with muffin liners.
  2. Sift together the Flour, Baking powder, Baking soda and Sugar with a pinch of salt.
  3. In a separate bowl, mash the bananas and let it sit for 10 minutes. Meanwhile mix the melted Blue Band Margarine, Vanilla Extract, Eggs and Butter Milk in another bowl and then mix the mashed Bananas.
  4. Mix the wet and dry ingredients. Roughly mix in with a fork, being careful not to over-mix.
  5. Bake for 20-25 minutes, until golden brown. Cool the muffins on a wire rack and serve.
