Beef & Mango Salad with Peanut Butter Dressing

- 200 grams beef steak thickly sliced
- 1 tablespoon garlic minced
- 1 tablespoon ginger minced
- half teaspoon lemon juice
- salt
- quater teaspoon ground black pepper
- 1 tablespoon oil
- half onion thinly sliced
- quater mango chopped
- coriander leaves roughly chopped
- 1 lettuce roughly torn
For the dressing
- third cup Blue Band peanut butter
- 1 tablespoon lemon juice
- 2 tablespoon honey
- 1 half tablespoon vinegar
- pinch black pepper crushed
- 5 tablespoon water
For the steak:
- In a bowl, mix together steak slices, garlic, ginger, lemon juice, salt and pepper. Let marinate for at least 20 minutes
- Heat oil in a pan and place the steak slices on it. Cook for 5-7 minutes and then take it off the flame.
For the dressing:
- Whisk all the ingredients for the dressing together until combined.
To assemble:
- layer a wide bowl with lettuce and mix in onions, mango cubes and coriander leaves. Top with the beef slices and drizzle some of the dressing over it. Serve.
