Ingredients
3 eggs
1 small onion chopped
1 tomato chopped
1/4 red bell pepper
1 green chilli
salt
1 tablespoon Blue Band margarine
5 tablespoon oil

Instructions
In a bowl, crack the eggs and add the onion, tomato, peppers, green chilli, and season with salt. Whisk together
In a pan, add Blue Band and once melted pour in the egg mixture.
Let it cook for 1 minute and then scramble it using a spatula
Cook for 1-2 minutes and set aside
In another pan heat oil and place the plantain slices cook for 2- 3 minutes on each sides until golden brown
Serve fried plantains with scrambled eggs
