Ingredients

  • 4 cloves garlic
  • 4 whole shallots
  • 1 tablespoon dried anchovies
  • 6 gram Belacan
  • 80 g Kang Kong (Water Spinach)
  • 400 g cooked Overnight rice
  • 4 eggs
  • 2 tablespoons kicap manis
  • 1/2 teaspoon salt
  • 1/2 teaspoon white pepper
  • 8 prawns
  • 2 tablespoons Blue Band Margarine

Instructions

  1. In a food processor, add Garlic, Shallots, Dried Anchovies, Belacan and Chilli Padis. Blend Roughly ,not into a fine paste.
  2. In a wok, add 2 tablespoons of Blue Band Margarine over medium heat, add spice paste and stir fry until fragrant.
  3. Add in prawns and stir fry until half cooked, add Kicap Manis and mix well.
  4. Move ingredients aside and add in 2 eggs and stir fry until cooked.Mix all ingredients together.
  5. Add in 1 tablespoon of Blue Band Margarine over medium heat, add in cooked rice and sliced Kang Kong and stir fry evenly over high heat, until Rice grains start to separate.
  6. Season with salt and pepper and mix evenly.
  7. Serve and top with Fried Ikan Bilis and Sliced Chillies.
