- 2 tablespoons oil
- 1 tablespoons Blue Band margarine
- 1 cup Canned tomatoes
- 1 red bell pepper
- 1/2 cup tomato paste
- 1 large onion blended
- 1 small onion chopped
- 2 Scotch bonnet chilli peppers blended
- 2 cups long grain rice
- 1 cup chicken stock
- 1 stock cube
- salt
- 1/4 teaspoon black pepper powder
- 1/4 teaspoon white pepper powder
- 1 bay leaf
- 1 teaspoon curry powder
- 1/4 teaspoon garlic powder
- 1/4 teaspoon thyme
- 1/4 teaspoon ginger powder
- Wash the Rice thoroughly to get rid of the starch and set it aside.
- To a large pot, heat oil and Blue Band Margarin, Add the Chopped Onions, and cook for 3-4 minutes.
- Pour in the tomato paste and let fry for 10-15 minutes, stirring continuously to avoid burning.
- Add in the blended Tomatoes, Onions, Scotch Bonnet, Red Bell Peppers, Stock Cube, and the remaining spices, Mix and fry for 30 minutes.
- Add the Chicken Stock and Salt and cook for an additional 10minutes.
- Add the washed rice, stir and lower the heat cover the pot with a lid and cook the rice on low for 15 - 20 minutes.
- Add some Blue Band Margarine and allow to melt in for added flavor and grain Separation.
- Cover with a lid and allow to steam for 3-5minutes.
- Once cooked, fluff with a fork and serve.
