  • 2 tablespoons oil
  • 1 tablespoons Blue Band margarine
  • 1 cup Canned tomatoes
  • 1 red bell pepper
  • 1/2 cup tomato paste
  • 1 large onion blended
  • 1 small onion chopped
  • 2 Scotch bonnet chilli peppers blended
  • 2 cups long grain rice
  • 1 cup chicken stock
  • 1 stock cube
  • salt
  • 1/4 teaspoon black pepper powder
  • 1/4 teaspoon white pepper powder
  • 1 bay leaf
  • 1 teaspoon curry powder
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon thyme
  • 1/4 teaspoon ginger powder
  1. Wash the Rice thoroughly to get rid of the starch and set it aside.
  2. To a large pot, heat oil and Blue Band Margarin, Add the Chopped Onions, and cook for 3-4 minutes.
  3. Pour in the tomato paste and let fry for 10-15 minutes, stirring continuously to avoid burning.
  4. Add in the blended Tomatoes, Onions, Scotch Bonnet, Red Bell Peppers, Stock Cube, and the remaining spices, Mix and fry for 30 minutes.
  5. Add the Chicken Stock and Salt and cook for an additional 10minutes.
  6. Add the washed rice, stir and lower the heat cover the pot with a lid and cook the rice on low for 15 - 20 minutes.
  7. Add some Blue Band Margarine and allow to melt in for added flavor and grain Separation.
  8. Cover with a lid and allow to steam for 3-5minutes.
  9. Once cooked, fluff with a fork and serve.
