- 30 gram Blue Band margarine
- 700 gram beef short ribs
- 1 litre coconut milk
- 100 gram Massaman curry paste
- 300 gram large potatoes cut into pieces
- 200 sliced onions
- 23 gram palm sugar adjust to taste
- 2 tablespoons fish sauce
- 2 cinnamon sticks
- 2 star anise
- 3 gram nutmeg
- 35 gram roasted peanut
- chilli and coriander for garnish
- Melt Blue Band Margarine in a wok pan , add and stir fry Massaman curry paste until fragrant.
- Add coconut milk mix well and bring to boil.
- Add Beef short ribs, Cinnamon, Anise, Nutmeg, next add Potatoes, Onions, and Roasted Peanuts.
- Bring to a simmer and season with Fish sauce and palm sugar.
- Cover and simmer on low heat for 1 hour or longer until Beef becomes tender.
- Serve with cooked Rice on the side, garnish with Chillies and Coriander.
