Ingredients

  • 30 gram Blue Band margarine
  • 700 gram beef short ribs
  • 1 litre coconut milk
  • 100 gram Massaman curry paste
  • 300 gram large potatoes cut into pieces
  • 200 sliced onions
  • 23 gram palm sugar adjust to taste
  • 2 tablespoons fish sauce
  • 2 cinnamon sticks
  • 2 star anise
  • 3 gram nutmeg
  • 35 gram roasted peanut
  • chilli and coriander for garnish

Instructions

  1. Melt Blue Band Margarine in a wok pan , add and stir fry Massaman curry paste until fragrant.
  2. Add coconut milk mix well and bring to boil.
  3. Add Beef short ribs, Cinnamon, Anise, Nutmeg, next add Potatoes, Onions, and Roasted Peanuts.
  4. Bring to a simmer and season with Fish sauce and palm sugar.
  5. Cover and simmer on low heat for 1 hour or longer until Beef becomes tender.
  6. Serve with cooked Rice on the side, garnish with Chillies and Coriander.
