Potato Croquettes

A delicious mix of taste and health. These yummy and easy bite-sized Potato Croquettes are a treat to have!

  • 1 cup Blue Band
  • 3 potatoes boiled mashed
  • 2 tablespoon fresh parsley chopped
  • 3/4 cup mozzarella block shredded
  • 1 egg
  • 1 cup breadcrumbs
  • salt to taste
  • pepper to taste
  1. In a large bowl add the mashed potatoes, the parsley, salt, pepper and mozzarella cheese and mix well. Use your hand to shape mixture into croquettes.
  2. In a frying pan, melt Blue Band margarine and bring to cooking temperature. Coat the croquettes with egg and breadcrumbs and fry until golden brown. Serve hot with ketchup.
