- 1 tablespoon oil
- 1 teaspoon garlic minced
- quater cup mushroom thinly sliced
- salt
- freshly ground black pepper
- quater cup spinach chopped
- 2 eggs
- 1 teaspoon Blue Band
- Heat oil in a pan and saute the garlic in it. Add the mushrooms, season with salt and pepper and cook for 2 minutes. Add the spinach, stir and set aside to cool completely.
- Once cooled, crack 2 eggs in a bowl and mix in the mushroom and spinach mixture.
- Heat margarine in a pan and add the egg mixture. Spread it out and cook for 1 ½ minutes on one side and then flip and cook for another 30 seconds.
- Serve with some toast and tea.
